Our Story

Ben Bishop Jr, managing partner, wanted to pay homage to the community and the land the restaurant sits on, which was once owned by Chesterfield pioneer, Justus Post. Chesterfield is a community rich in history. It has housed a GI recovery camp (the first-of-its-kind in the country), has a farming past and has survived a powerful twister and a great flood, Going back even further, it was the site of Native American inhabitation for thousands of years.

So how did Chesterfield get its name? Not from the Chesterfield potato or the Chester pig or even a visit from British statesman Lord Chesterfield. Instead, it was a name that founder Colonel Justus Post copied from the east Coast. He thought it to be a sophisticated name – one that would draw people.

Justus Post arrived in Chesterfield in 1815 from Vermont, initially purchasing an estate of 400 acres, including his house.. He would eventually acquire over 21,000 acres, some for as little as $1.25 per acre. He laid out the original named community of Chesterfield straddling Wild Horse Creek Road, between Baxter and Wilson. Wild Horse Creek Road was “Main Street”. The cross streets were named Mulberry, Locust, Walnut, Prune, Vine, Chestnut and Oak. However, the town plat was not recorded until 1838. Post built his brick mansion in 1822. It is said his house was one of the first in the area to have carpet. He lived in Chesterfield for over 30 years.
